The History of Kataifi

Fibrous, delicate and special, the kataifi filo sheet was originally made on large, copper disks like huge turntables, which were warmed over an open fire before placing the dough made of flour, salt and water. Then, a turntable needle-like mechanism released the dough in thin lines by moving from the center to the outside of the rotating disk. In a few seconds, the heat had formed the Kataifi fibres and the craftsman, in one motion, pulled and collected the baked fibres. Nowadays, the method is not wildly different, but the process and production have been modernized with the aid of technology.
