Μπουρεκάκια με Πιπεριά και Φέτα

Warm the olive oil in a pan and sauté the onion and leek over high heat for 2-3 minutes until they become golden. Add the peppers and cook until tender, then incorporate the scallions. Combine all the ingredients, season with salt and pepper, and take the pan off the heat. Allow the mixture to cool before adding the mint, feta, yogurt, and eggs, and stir until well mixed.

 

Preheat the oven to 180°C (fan setting).

 

On a floured surface, roll out the first sheet of Xrisi Zimi Shortcrust pastry. Slice it in half with a knife. Spread the filling along the longer side of the dough. Roll each piece into a long cylinder, then cut into smaller sticks. Arrange them on a greased baking tray. Repeat with the second sheet of pastry.

 

Drizzle the rolls with olive oil, sprinkle with sesame seeds, and bake for 40 minutes or until they turn golden brown.
