Prepare the Pork: On a cutting board, use a sharp knife to cut the smoked pork chop into small cubes. Cook the Potatoes: On another cutting board, cut the potatoes into cubes. Place them in a pot with salted water and boil until they soften. Mash the Potatoes: Once the potatoes are ready, drain them and place them in a bowl. Roughly mash them with a fork.
Mix the Filling: Add the grated cheddar, grated graviera, chopped chives, 40 ml of olive oil, salt, and freshly ground pepper to the mashed potatoes. Mix well. Prepare the Filo Sheets: Brush one filo sheet with olive oil, fold it in half, and fold the two vertical sides inward by about the width of a finger. Assemble the Pies: Place 2 tablespoons of the potato mixture on the upper triangular part of the filo sheet. Add the chopped smoked pork on top, creating a circular nest, and place an egg yolk in the center.
Seal the Pies: Brush water around the edges of the filo sheet. Fold it into a triangle and press the edges firmly to seal.
Repeat the process with the remaining ingredients and filo sheets.
In a pan with about one finger’s depth of sunflower oil, fry the pies for a total of 2-3 minutes on both sides until golden brown.
