Cut the greens and herbs with your hands and put them into a large bowl with 2 tablespoons of coarse salt. Press with your hands in order to reduce their volume and let the salt go all over. Leave them with the salt for approximately 30 minutes and then press them in a strainer to remove any liquids.

 

Preheat the oven to 180°C. Season the greens with pepper and then add the flour, feta cheese and 1/2 cup of olive oil. Remove the pastry sheets from the package and lay them out on a flat surface. Cover them with a clean dish towel so that they do not go dry. Use a brush to oil a round oven tray. Lay one filo pastry sheet out on the flat surface. Lightly brush the pastry sheet with some olive oil and place some of the filling on.

 

Create a spiral and place it in the centre of the oven tray. Continue with the remaining pastry sheets, wrapping each one around the spiral. Once you have used all the pastry sheets, brush the top with some oil once again. Bake for 30-35 minutes or until golden brown.
