INGREDIENTS
1 packet of Chryssi ZymiCryssi Zymi Puff Pastry, 850g
Let the pastry defrost according to the package instructions. Heat the olive oil in a deep non-stick frying pan and lightly sauté the spring onions with all the mushrooms and the garlic, until all the liquid evaporates. Remove the pan from the heat and add the dill, parsley and season with salt and pepper to taste.
Let the mixture cool and butter an oblong baking tray. Preheat the oven to 180°C. Lay out the first sheet of Cryssi Zymi Puff Pastry and cover the bottom and sides of the baking tray. Use a fork to poke holes in various parts of the pastry.
Beat the eggs with the yoghurt and add the grated kasseri cheese. Add the mushroom mixture and mix. Empty the final mixture out onto the puff pastry sheet and cover the pie with the second sheet.
Cut the excess dough hanging over the edges of the baking tray and after wetting the dough all around, press the edges of the bottom puff pastry sheet against the top sheet to join them. Poke holes into the surface of the pie and bake in a preheated oven until golden brown.
Cut it into pieces and serve hot or lukewarm.
