In a large bowl, place the grated feta cheese along with the anthotyro, egg, finely chopped thyme, and oregano. Sprinkle with freshly ground black pepper and mix well.

 

Spread one sheet of puff pastry on a clean, lightly floured surface and roll it out slightly in all directions with a rolling pin.

 

Cut the puff pastry into small 10×10 cm squares, place a tablespoon of the filling in the center, brush the edges with a little water, and fold into a triangle shape, pressing the edges to seal and creating small pleats. Place the cheese pies on a shallow baking tray lined with non-stick paper, brush them with the beaten egg using a pastry brush, and bake in a preheated oven at 200°C (392°F), using the fan setting, for 20-22 minutes.

 

Repeat the same process with the second sheet of puff pastry.
